This is Week 27 of my Summer CSA. We have one more week, then our Winter CSA starts on November 13th.
This week we had, (surprise!) more gourds, ornamental corn, tomatoes, round white radishes, bell peppers, a white acorn squash, apples and two other winter squash.
I have a stock pile of peppers, so we will be roasting again soon. Now that I have two acorn squash (one from last week), I feel better about serving stuffed squash for dinner. Potentially having two varieties of stuffed squash at one meal felt like I was setting myself up to mediate a battle scene.
The two other squash are what I guess are delicata squash and I think I can bake them sliced with the skins on. Earlier this season, I made a flatbread with slices of “mystery squash” that appeared to be failing miserably throughout the entire process, then it turned out to be really good. I threw out the recipe that I had worked with, THAT is how bad I thought it was going to be. Now I have to search and see if I can find it again to “recreate the magic.” 🙂
