London Broil with corn fritters and roasted veggies

I had thawed a chuck roast, but didn’t have a plan for how to cook a roast in an evening in time for dinner after work.   This small roast was easily re-characterized as a large steak, which made my choices much easier.  

I patted the roast with paper towels then sprinkled both sides with salt and pepper and let it sit at room temperature while I prepared the batter for the corn fritters.

Corn Fritters with Roasted Tomatoes and Zucchini

Preheat oven to 400°.

  • 1/2 c. small tomatoes, whole               In medium baking pan, toss in tomatoes and
  • 1/2 c. sliced zucchini                              zucchini in oil and season with salt and pepper.
  • 1 T. olive oil                                            Roast for about 20 minutes. Remove pan from
  •                                                                  oven and set aside.
  • 1/2 c. buttermilk
  • 1 egg
  • 1/4 c. ricotta cheese                             Combine these ingredients in medium bowl.
  • 1/2 c. flour
  • 1 t. chopped green onions
  • Corn kernels, off cob   ( I only had one ear of corn, so I was stuck with that)

Fold corn kernels and green onions into batter.  Heat griddle  and coat with cooking spray.  Pour batter onto griddle in desired size and cook until better is set, holes in appear in dry top of fritter and bottom side is golden brown.  Then turn and cook until both sides are golden brown.  Fritters should be topped with roasted vegetables.

London Broil

When vegetables are done roasting, turn oven up to 500°.  Heat large cast iron or other oven safe pan over high heat, with olive oil (or a small amount of bacon fat) until shimmery and almost smoky.  Add roast and cook for 10-20 seconds, then place pan in oven and cook for 5 minutes.  Turn roast and return t oven to cook for another 5 minutes.

If both sides aren’t nicely seared and the internal meat temperature 125° (I tend to get impatient), I pulled the pan from the oven and returned it to the stove top on med. high heat until I got the sear and the internal temperature I was looking for.
Put steak on cutting board and allow to rest for 5 minutes.  Slice across the grain.

We have these huge plates, so our portions always look skimpy, but I was stuffed when we were done.

My  daughter practically licked her plate clean.

The corn fritter recipe can easily be multiplied to make more than 6 pancakes.
