Zucchini Brownies – Recipe


  • 1 egg
  • 1 c. granulated sugar
  • 1/2 c.  Nutella hazelnut spread
  • 1/2 canola oil
  • 1 t. vanilla extract
  • 1 c. flour
  • 1/2 t. baking powder
  • 1/2 t baking soda
  • 1/4 t. salt
  • 1/2 c. chopped nuts
  • 2 c. shredded zucchini

Preheat oven to 350.

Combine egg and sugar in mixer.  Add Nutella melted in microwave, canola oil and vanilla, mixing until combined.

Combine flour through nuts in medium bowl and mix with whisk.  Add flour mixture slowly to mixing bowl.  This is a fairly stiff dough.  Fold in zucchini until dough is consistent texture.  Pour into greased  9×9 baking pan.

Bake for approximately 40 minutes, until toothpick inserted in center comes out clean.  Cool in pan.
